For the realization of this workpitahayas was used with red color of the skin in 70%. The slices without skin were dipped in aconcentration of 500 ppm of chlorine, 1% of ascorbic acid and 1% of chloride of calciumduring 5 minutes and later on they were packed under conditions of modified atmosphere usinga plastic film of polipropileno and they were stored at 4 and 8ºC.
