contents Optimization of parameters affecting dealcoholization of anthocyanin extract from red cabbage by liquid emulsion membrane using response surface methodology Prakash Binnal Rajashekhara S. Jagadish Patil Ingeniería red cabbage Dealcoholization anthocyanin extract liquid emulsion membrane response surface methodology In the present work, anthocyanin from red cabbage was extracted using 50 % ethanol. The extract was dealcoholized by the liquid emulsion membrane technique. Kerosene was used as a solvent; Span 80 was used as a surfactant and water as a stripping medium. The parameters affecting the efficiency of the liquid emulsion membrane were optimized using the response surface methodology (RSM). Design-Expert version 13 was used to perform the statistical analysis. A second-order polynomial equation was fitted to experimental data by regression analysis (R2 =0.93). Response surface plots were analyzed and optimum parameters for dealcoholization were found to be agitation speed during extraction = 200 rpm, agitation time =16.46 min, concentration of Span 80 =2.79 %, volume ratio of emulsion to feed =2.83. A maximum dealcoholization of 16.28 % was observed under these optimum conditions. 2021 artículo científico 1665-6423 https://www.redalyc.org/articulo.oa?id=47471710001 https://www.redalyc.org/journal/474/47471710001/ https://www.redalyc.org/journal/474/47471710001/html/ https://www.redalyc.org/journal/474/47471710001/47471710001.epub https://www.redalyc.org/journal/474/47471710001/movil 10.14482/INDES.30.1.303.661 en http://www.redalyc.org/revista.oa?id=474 Journal of Applied Research and Technology application/pdf Universidad Nacional Autónoma de México Journal of Applied Research and Technology (México) Num.6 Vol.19
