These samples were diluted to different concentrations ranging from 10-1 - 10-7 and plated on, thereby obtaining bacterial colonies, which were evaluated in vitro with growth tests, shape, color, size, mobility, presence of spores, lactic acid production, fermentation of carbohydrates, acid resistance (2.5 to 6.5) and temperature profiles from (4 °C - 50 °C).
