- Diseño de una máquina para deshebrar carne en un comedor industrial Orlando Uzcátegui Lucia Martino Ingeniería Shredded meat food equipment food processing One of the fundamental problems of the canteen (dining room) at the University of Carabobo is that there is no specific equipment for meat processing, specifically for shredded. The employees of this institution use equipment not designed for this task, consequently resulting in low product quality (shredded meat) and failures in the equipment used for this purpose. The goal of this research is to design a device capable of processing (shredded) 1.500 kg of meat per hour. This dining area was visited in order to know the characteristics of the process of elaboration of shredded meat, with this information a prototype of the meat shredder was constructed to evaluate the speed of rotation for a value of thickness and width of the meat strand ≤ 5 mm to obtain a quality product, the speed of rotation obtained is 700 rpm.
