Alemán Química rapid methods Water activity The kinetic to reach the equilibrium of relative humidity (ERH) in the atmosphere of an assay system was used toestimate the water activity of saturated solutions and fishery products. Relative humidity (RH) was controlled using aThermohygrometer. Linearity was observed 20 min after the test started and corresponds to the following equation: 100/RH=i+m(1/t); where "i" is intercept and "t" is time. For infinite time at equilibrium, equation changes to: 100/ERH=i;where ERH/100 is Aw value estimated. Accuracy and precision were evaluated using saturated solutions and fisheryproducts. The difference between Aw obtained by the hygrometric method and by the interpolation method, ranged from-0.057 and 0.039 units of Aw. The mean absolute error was for hygrometric method 3.15% and 3.59% for the solutionsand products, respectively. Accuracy of the hygrometric method is improved with appropriated sample weights for eachtype of product. © 2002 Altaga.
