Somemethodological peculiarities in Anthropology-of-Food type fieldwork are suggested. Themethodological choices involved and a previous theoretical position in favor of symbolismagainst materialism converge in the writer´s work here. This has driven him to dealwith some different forms and processes of Maya-ch´orti´s´ identity construction, individual,communal and supra-communal. These forms and processes are built upon customsand representations of food. This work suggests how ch´orti´s people use culinary meta phors to build ideas of historical and cosmological transition. Finally, as an ethical corollaryand a theoretical and methodological extension to cultural work about food, theauthor points out the need of doing anthropological research about hunger in contextssuch as the maya-ch´orti´.
