We also studied the semi-quantitative changes in the chemical composition of the pericarp by x-raydiffraction. By correlating the results obtained by x-ray diffraction and photoacustics we propose that nixtamalization canbe viewed as a series of physicochemical phenomena that involve hemicellulose dissolution, swelling, alkaline celluloseformation and phase transition between native and mercerized cellulose.
