Oliva Física, Astronomía y Matemáticas 50 61 10 16 Bg In this work we study the effect of the nixtamalization time on the structural, morphological and thermal properties of thecorn pericarp. We also studied the semi-quantitative changes in the chemical composition of the pericarp by x-raydiffraction. By correlating the results obtained by x-ray diffraction and photoacustics we propose that nixtamalization canbe viewed as a series of physicochemical phenomena that involve hemicellulose dissolution, swelling, alkaline celluloseformation and phase transition between native and mercerized cellulose.
