Islam Food Bioengineering ABSTRACT The recent focus on sweet potatoes [ Ipomoea batatas (L.) Lam] and their leaves have made them intriguing subjects for research. They contain bioactive compounds showing potential health benefits in vitro and in vivo studies. Therefore, utilizing green extraction techniques for these bioactive compounds could enhance the commercial potential of different parts of sweet potatoes. A variety of conventional solvent extraction methods, as well as environmentally friendly (green) extraction techniques, have been utilized for the isolation of bioactive compounds from sweet potato and its leaves. However, the methods for extracting bioactive compounds from various parts of sweet potatoes must be more thoroughly documented in the literature. This review aims to provide the latest information about the extraction techniques, safety, nutritional value, bioactive compounds, and potential health benefits of different parts of sweet potatoes and their application in the food and pharmaceutical industries. From conservative methods to ground‐breaking technologies, each extraction procedure presents unique compensations and challenges, thereby influencing the landscape of sweet potato leaves research and its applications in health, nutrition, medicine, and manufacturing. 10.1002/fbe2.70021 http://creativecommons.org/licenses/by/4.0/
