- <p>This presentation is part of the training material of FunShield4Med 2nd Workshop entitled "Predictive Mycology and Quantitative Mycological Risk Assessment" held at National & Kapodistrian University of Athens on 28-29 November 2023. This presentation explores how climate change — especially rising temperature, CO₂ levels, and shifting rainfall patterns — is transforming fungal behavior and mycotoxin contamination risks. Focusing on aflatoxin B1 produced by <em>Aspergillus flavus</em> in maize, the study uses environmental chambers to simulate future scenarios (up to +5°C and 1000 ppm CO₂), revealing significantly higher toxin production under these stressors. RNA sequencing further shows earlier and stronger gene activation in mycotoxin biosynthetic clusters under water stress. The talk concludes that current predictive models are insufficient and that food safety—especially in vulnerable regions—could be seriously undermined unless proactive measures are taken.</p>
