- <p><span>Fermented milk products have been an integral part of human diets for centuries, embraced by cultures worldwide for their distinct flavors, enhanced nutritional value, and potential health benefits. These dairy products are created through the controlled fermentation of milk, a natural process that involves the action of beneficial bacteria or yeast strains. Fermentation not only improves the taste and texture of milk but also extends its shelf life by inhibiting the growth of harmful microorganisms.</span></p> <p><span>Among the most popular fermented dairy products are yogurt, kefir, buttermilk, and cheese, each distinguished by unique production techniques and microbial cultures. Yogurt, for instance, is produced by fermenting milk with specific bacterial strains such as <em>Lactobacillus bulgaricus</em> and <em>Streptococcus thermophilus</em>, resulting in a creamy, tangy product rich in probiotics. Kefir, a traditional fermented drink, contains a diverse mix of bacteria and yeast, offering a slightly effervescent texture and a robust probiotic profile.
