- <div> <div> <div> <p>The effects of dietary polyphenol-rich fibers on human health have been extensively discussed in the context of prevention against metabolic syndromes. Recently, the health-promoting effects of polyphenolic compounds, specifically anthocyanins and dietary fiber rich black carrots have gained increasing attentions across science and research community. Black carrot polyphenols and fibers can contribute to minimal weight gain and low total cholesterol level in blood through extending digesta transit time, reducing body fat mass and transporting bound-polyphenols relatively intact to the colon, where those released and metabolized by gut biome. The purpose of this study was to investigate the effects of black carrot polyphenol-rich fiber consumption on total concentrations of plasma cholesterol – using pig as a model. This study analyzed past samples from a comprehensive feeding study. The diets with added black carrot had markedly larger particle size (p < 0.05). No significant difference existed in weight gain and total plasma cholesterol concentrations between the dietary treatments (p > 0.05). However, the trend of results demonstrated a positive indication that the inclusion of black carrots into diet caused change in weight gain and plasma cholesterol level. These results suggest that polyphenols, mainly anthocyanins and fiber rich black carrots had beneficial effects on management of weight and blood cholesterol concentrations, irrespective of fat content of the diets.</p> </div> </div> </div>
