Descripción: This work evaluates the effect of high-energy mechanical milling time (7 levels, 20–80 min) on amylose content, crystallinity pattern, temperature and gelatinization enthalpy, morphology, and rheological properties of chayotextle (Sechium edule Sw.) starch. After 30 min of milling, granular structure was affected, and amylose values were the highest while crystallinity and gelatinization enthalpy decreased significantly. These changes allowed to obtain gels with viscoelastic properties where the elastic character (Ǵ) prevailed upon the viscous modulus (Ǵ́). Native starch showed Tan δ values of 0.6, increased significantly (0.9) after 30 min of milling due to the surge in linear chains (amylose) and loss of granular structure. Native and modified starches showed high dependence on cutting or shear speed, presenting a non-Newtonian behavior (reofluidizers). These results indicate that mechanical grinding is an alternative to obtain modified starches with applications in the food industry.

Descripción: The effect of osmotic dehydration (OD) with different sucrose concentrations and temperatures was studied in combination with drying by Refractance WindowTM (RW) in beet slices with thicknesses of 1 and 5 mm. The color, texture, total polyphenol content (TPC), total flavonoid content (TFC), and antioxidant capacity (AC) of the beet with OD, RW, and OD-RW combined drying were evaluated. The best results of water loss (WL) and solid gain (SG) with OD were obtained with 65% sucrose solution at 60 °C. OD partially reduced the water content of the slices, decreasing the drying time with RW at 85 °C. However, the retention of qualities such as color, texture, TPC, TFC, and AC in beet was obtained with combined drying by OD-RW at 60 °C under OD conditions of 65% sucrose at 45 °C. These conditions afforded a stable product retaining its physical and chemical properties.

Descripción: The outstanding hydrographic variations in Bahía Vizcaíno, Baja California, were analyzed from temperature, salinity and dissolved oxygen data collected during the ECONER-0391 oceanographic cruise (March 18-22, 1991) and from similar data obtained from a data bank (Banco de Datos e Información Oceanográfica) of the Secretaría de Marina (1960-1968). In winter the vertical distribution of water properties was almost homogeneous and less stable, while in summer it was stratified into three main layers owing to seasonal warming and the annual mean upwelling event. The lower layer had its origin in the Equatorial Transformed Water Mass, which is characterized by Iow dissolved oxygen content (< 3 ml/l). The top layer had higher temperature and dissolved oxygen (> 5.5 ml/l). In general, the intermediate layer or thermocline was associated to a minimum in salinity of Subarctic Pacific Water Mass origin. At the end of the fall the vertical three-layered structure weakened and, during the winter, heat and other water properties were nearly homogeneous in the water column. The propagation of heat from the surface layer and the annual upwelling event controlled the annual variability in temperature in the lower Ievels (>30 m). Consequently, the surface temperature was on phase with the normal annual atmospheric cooling and warming cycle, and lower levels cooled in summer and warmed in winter. The main processes affecting the hydrographic variability in the bay were: the annual upwelling event, the seasonal warming and cooling, the water advection from the upwelling period (September), the convergence of waters to the South of the bay and the intrusions of the Subarctic Pacific Water Mass and Equatorial Transformed Water Mass.

Descripción: In the Midriff Islands region (MIR) of the Gulf of California (Mexico), tidal mixing plays a very important role in the distribution of chemical properties. Although the temporal variability of the water masses is linked to the ocean dynamics of this region, its importance has not been considered. This work estimates the effect of water mass dynamics on the spatial distribution and seasonal variation of dissolved inorganic carbon (DIC) in the region, with special emphasis on the Ballenas Channel, during winter 2002, spring 2003, and summer 2004. Gulf of California Water (GCW) was found throughout the area in the first 100 m. Below, Subtropical Subsurface Water (SSW) filled the Delfín, Salsipuedes, and Tiburón basins, while to the southeast it was found between 150 and 350 m. Pacific Intermediate Water did not cross the sills. SSW enriches the surface water of the MIR with DIC when it increases in volume and when mixed with GCW by tidal effects. This contribution decreases towards summertime, when SSW sinks and the volume of GCW increases. In winter, GCW had three water types associated with oceanographic mixing processes and in combination with the presence of SSW. There was a strong DIC vs temperature relationship, which can be applied to analyze the carbon dynamics in the MIR, both at the surface using satellite imagery and vertically to simulate physical processes.

Descripción: Escontria chiotilla (jiotilla) fruit pulp has a high content of sugars, vitamins, antioxidants, and betalains. However, jiotilla fruits exhibit high susceptibility to microbial attack and physicochemical degradation during storage. Spray-drying of jiotilla fruit juice rich in betalains was carried out using maltodextrin as a carrier material. The effects of inlet (140 and 160 °C) and outlet (80 and 90 °C) temperatures and maltodextrin levels (1 and 2 g·g juice solids⁻¹) on process yield and physicochemical properties of jiotilla powders were studied. Maltodextrin concentration significantly affected (p < 0.05) all evaluated responses, except a_w and °Hue values, whereas drying temperatures did not significantly affect any response. An increase in process yield and luminosity, along with a decrease in chroma values and betalain content, was observed as maltodextrin concentration increased. Physicochemically stable powders (a_w < 0.25), with a color tendency toward red (°Hue: 11–13°), intermediate cohesiveness, fair-to-good flowability, high solubility (92.16%), low hygroscopicity (16.28 g H₂O·100 g db⁻¹), and high contents of betacyanins (82.4–127.1 mg BC·100 g db⁻¹) and betaxanthins (174.7–275.3 mg BX·100 g db⁻¹) were obtained. Jiotilla powder could be applied in the development of food products, even outside the jiotilla fruit production season.

Descripción: Green synthesis may be a useful approach to achieve selective cytotoxicity of silver nanoparticles on cancer cells and healthy cells. In this study, the concomitant biosynthesis of silver (Ag)/silver chloride (AgCl) nanoparticles from pineapple peel extracts and their behavior on the breast cancer cell line MCF-7 is shown. Bioreactions were monitored at different temperatures. Fourier-transform infrared spectroscopy (FTIR), ultraviolet–visible spectroscopy (UV–vis), thermogravimetric analysis (TGA), X-ray diffraction (XRD), energy-dispersive X-ray spectroscopy (EDX), and transmission electron microscopy (TEM) techniques were used to characterize nanoparticle development. The breast cancer cell line MCF-7 was used as a test model to study the cytotoxic behavior of Ag/AgCl nanoparticles and, as a counterpart, the nanoparticles were also tested on mononuclear cells. Ag/AgCl nanoparticles with spherical and triangular morphology were obtained. The size of the nanoparticles (10–70 nm) and the size distribution depended on the reaction temperature. A dose close to 20 µg/mL of Ag/AgCl nanoparticles considerably decreased the cell viability of the MCF-7 line. The best cytotoxicity effects on cancer cells were obtained with nanoparticles at 60 and 80 °C where cell viability was reduced up to 80% at a concentration of 50 µg/mL. A significant preference was observed in the cytotoxic effect of Ag/AgCl nanoparticles against cancer cells in comparison to monocytes.

Descripción: Chemically modified starches are widely used as food additives to improve the appearance and physicochemical and biological properties of foods. The aim of this work is to chemically modify chayotextle (Sechium edule) starch by hydroxypropylation-crosslinking, and evaluate the effects of degree of substitution (DS), swelling power (SP), solubility index (SI), pasting, thermal properties, and morphological and molecular characteristics. Polar-Tex (modified maize starch) is used as control. The modified chayotextle starches (CHSs) exhibit a white color and DS values between 0.34% and 1.19% hydroxypropyl, dependening on propylene oxide concentration-response. In addition, the SP and pasting properties are higher in modified CHS than in native CHS and Polar-Tex. The SI and temperature of gelatinization of modified starches decrease compared to native sample. The morphology of native and modified CHS granules is spherical and oval. Fourier transform infrared and nuclear magnetic resonance studies confirm the structural modifications of CHS by hydroxypropylation-crosslinking. Dual-modified CHS can be potentially used as an additive in the food industry.

Descripción: Hydrographic data from two cruises, taken in February and August 1992, were used to describe the vertical thermohaline structure, the presence of water masses in the region of the mouth and central part of the Gulf of California, and meridional and zonal flows, respectively. The observations presented here show a marked thermal change between both seasons, with surface temperatures of about 19.00ºC in February and 32.00ºC in August. Thermal maxima (32.75ºC) and salinity minima (33.00) define a significant presence of Tropical water in the interior of the gulf in 1992, which suggests the occurrence of the El Niño phenomenon. This condition increased the intensity of the geostrophic flow and, in the central part of the gulf, velocities of 95 cm s–1 were recorded in February and of ll5 cm s–1 in August.

Descripción: A ready-to-eat, protein-rich snack was developed using a blend of nixtamalized maize (Zea mays L.) flour and grasshopper (Sphenarium purpurascens Ch.) meal, and an evaluation of the effects of the formulation and extrusion processing on the chemical composition, color parameters, and acceptability of the extrudates was conducted. The increase in extrusion temperature (120–180ºC) decreased the moisture (8.14–5.91 g/100 g) and lipid content (2.20–1.95 g/100 g) and increased aroma (3.82–4.24), texture (1.61–4.82), flavor (2.67–4.52), and overall acceptability (2.88–4.67). The increase in the grasshopper meal proportion (0–40 g/100 g) decreased the carbohydrate content (89.45–65.39 g/100 g), and whiteness index (68.51–47.14) and increased the protein (5.33–22.51 g/100 g) and ash contents (1.67–7.88 g/100 g), color difference (30.98–52.30), and browning index (24.28–39.77). The acceptability of the snack was oriented toward extrudates that had a color with a high L* (Corr = 0.74), with yellow tones b* (Corr = 0.73), and a whiteness index (Corr = 0.72). Therefore, the best products were those obtained at 167.8°C, proportion of grasshopper meal = 8.11 g/100 g, and a feed moisture content of 18.81 and 21.19 g/100 g, respectively, with a protein content of 13.27 and 13.66 g/100 g.

Descripción: Resistant starch from plantain (Macho Musa paradisiaca L.) and banana (Roatan Musa sapientum L.) varieties was chemically modified by crosslinking using epichlorohydrin (EPI). These modified starches were subjected to in vitro digestibility studies using the Englyst method to determine the content of rapidly digestible starch (RDS), slowly digestible starch (SDS) and resistant starch (RS). The thermal stability of these crosslinked starches was evaluated by gelatinization and retrogradation analyses, and their enthalpies were determined using differential scanning calorimetry (DSC). Additionally, their functional properties were evaluated. Chemical modification with EPI significantly increased the RS content in both starch varieties compared to that in native starch. The enthalpy and gelatinization temperature decreased in the EPI-modified starches of both varieties, indicating lower thermal stability during the gelatinization process compared to that of native starch. In general, both varieties of crosslinked plantain starch had lower viscosity (0.43 Pa*s) than did native starch (0.58 Pa*s). The results indicates that this starch crosslinked with EPI constitutes an alternative for use in food for people with health problems such as high cholesterol levels or postprandial insulin concentrations.

Descripción: Starches from the Macho (Musa paradisiaca L.) and Roatan (Musa sapientum L.) banana varieties were chemically modified by sodium trimetaphosphate (STMP) cross-linking. Cross-linking affected the pasting properties of the modified starch, with more pronounced changes observed in the Macho variety than in the Roatan starch. In turn, this result indicated that the former starch source is more susceptible to STMP cross-linking. The swelling and solubility profiles exhibited an important decrease with cross-linking, which was caused by increased ordering of the internal granule structure induced by cross-linking modifications. The gelatinization temperature and enthalpy increased due to cross-linking, indicating an improvement in the starch granule stability. Englyst's in vitro digestibility studies of the modified starch were performed to estimate the content of rapidly digestible (RDS), slowly digestible (SDS) and resistant (RS) starch fractions. It was shown that STMP cross-linking increased the RS content of the two banana varieties. However, the SDS content increased only for the Macho variety. In general, the viscosity was lower for the modified starches than for their native counterparts. The results of the current work indicate that the chemical modification process via STMP cross-linking offers an interesting alternative for obtaining RS from banana starches.

Descripción: To study the spatial and temporal variability of bioavailable Cd, mussels (Mytilus californianus) were transplanted from a control zone to two upwelling areas off the northwestern coast of Baja California, Mexico. The mussels were placed at 5 and 15 m depth on buoy systems, at two sites selected for their different upwelling intensity. Punta Banda is characterized by intense upwelling events, with mean monthly temperatures of 13.00 ± 1.83ºC and abrupt drops in temperature to 9.7ºC, whereas upwelling off the Coronado Islands is less intense and mean monthly temperatures are 16.33 ± 2.15ºC, with abrupt drops in temperature to 11.0ºC. Mussel samples were collected regularly during upwelling (April to September) and non-upwelling periods (January to March). Mean Cd concentrations in soft tissue of transplanted mussels were higher at Punta Banda (17.23± 1.89 ∞g g|–1 dry weight) than at Coronado Islands (9.86 ± 1.37 ∞g g–1 dry weight). The analysis of correlation showed that the concentration of Cd in mussels from Punta Banda (r = 0.91) and Coronado Islands (r = 0.75) is related to the Bakun upwelling index. These results suggest that upwelling plays an important role in controlling Cd content in M. californianus from northwestern Baja California. Transplanted mussels proved to be excellent bioindicators of upwelling.

Descripción: Oat (Oa) and apple (Ap) starches were isolated and chemically modified by oxidation with 10% NaOCl to obtain oxidized starches (OOa and OAp), followed by cross-linking with a mixture of 5.6 g of sodium tripolyphosphate and 11 g of sodium trimetaphosphate to obtain doubly modified starches (OCOa and OCAp). In the native and modified starches, the functional properties (swelling power and solubility, and freeze-thaw stability) and thermal and rheological properties (steady-state flow curves and paste formation profile) were evaluated. The swelling power of native and double modified starches varied from 57 to 86 g/g and the solubility from 0.8 to 6.0 g/100 g, these variables increased as the study temperature increased; the increment in these properties was greater in Oa compared to Ap. Oxidation followed by crosslinking increased the freeze-thaw stability in Oa and Ap starches at 30, 60, 75, and 90 °C. It also increased the Tg of OCAp and OCOa ≈ 9% compared to the native samples, respectively; while an inverse pattern was observed in apparent viscosity were this value decreased ≈ 0.8 Pa × s for Oa and ≈ 0.5 Pa × s for Ap compared to the double modified samples. All samples presented a thinning cut-type behavior (pseudoplastic), indicating structural differences. Cross-linking in oxidized starches produced a reinforcing matrix that was determined in the paste formation profile. Dual modification (oxidation-cross-linking) could be an alternative for using starches from underused botanical sources, such as apples and oats, with different functional properties and feasible applications in food systems.

Descripción: Growth, biomass yield, fiber content and lodging resistance were studied, during a six month growth period, for eight varieties of Cenchrus purpureus, intended as energy crop, in Veracruz, Mexico. Then, only yield at day 182 was assessed for two additional years. The varieties were: CT115 (CT), African Cane (AC), Taiwan (TAI), King Grass (KG), Vruckwona (VRU), Roxo (RX), OM22 (OM) and Cameroon (CAM). Local weather is warm and sub-humid, historical data for monthly average temperature and annual rainfall were 25.8 °C and 1142 mm, respectively. Height, diameter and light interception were measured monthly from day 65–185. At day 185, biomass yield and tiller density were measured. Number of lying tillers was counted to estimate lodging resistance. Cellulose and hemicellulose content were estimated in leaf and stem. No differences were found for dry matter yield or stem yield at day 185 in the first year. Regarding the next two years, TAI yielded above CT, OM or ROX. Average dry matter yield was higher in the second year than in the establishment cycle (38.6 vs 21.1 Mg ha−1), but decreased in the third year (32.2 Mg ha−1). In both stem and whole plant, AC and KG showed higher hemicellulose content than RX, OM or CT; while AC and VRU had higher cellulose than RX in stem, or than CT in the whole plant. Furthermore, varieties AC, KG, VRU and TAI were resistant to lodging and had a higher fiber content, so they are recommended as energetic crops.

Descripción: Marine mollusks provide important ecosystem services. They create habitats for benthic organisms, filter water, biodeposit organic carbon in the seafloor, and serve as food sources for other organisms. Studies of mollusk diversity require time-consuming methods to process samples and identify species. Thus, it is not surprising that most studies have focused on macromollusks that can be collected and processed easily, ignoring micromollusk species. Without understanding the ecology and distributions of micromollusks properly, it is impossible to assess their populations and implement adequate conservation measures. Here we present microgastropods collected in Bahia de los Angeles at the family level for September 2013 (summer) and February 2014 (winter). During each season, we sampled 6 coastal sediment stations, and analyzed depth, salinity, temperature, granulometry, and organic matter. A total of 20,353 specimens were collected: 15,310 in summer and 5,043 in winter. Seven micromollusk families were identified: Barleeidae, Caecidae, Cerithiidae, Eulimidae, Pyramidellidae, Rissoidae, and Tornidae. Caecidae and Barleeidae exhibited the highest densities among all families in summer and winter, respectively (278,044 ind·m–2, 142,222 ind·m–2). The lowest densities for summer and winter were observed for the Tornidae family (~1,867 ind·m–2, ~1,411 ind·m–2). Barleeidae, Caecidae, Cerithiidae, Rissoidae, and Tornidae were classified as herbivorous and detritivorous; Eulimidae and Pyramidellidae, as carnivorous and ectoparasitic. Tornidae and Eulimidae showed symbiotic relationships with various invertebrate species. The Bayesian analysis of variance indicated a high probability of differences only in summer (BF > 3). When comparing the stations in both periods, all stations, except station 6, showed differences between periods (BF > 3). The canonical correlation analysis indicated some associations between family abundances and temperature. This study provides valuable information that expands the knowledge of micromollusk biodiversity in the coastal area of Bahia de los Angeles, an important site for conservation in Mexico.

Descripción: Eleven time series were carried out at one station in Estero de Punta Banda, from June 1987 to May 1988. The samples were taken during the day at spring and neap tides and the following variables were analysed: temperature, salinity, concentration of phosphates, nitrates, silicates and chlorophyll a. Two primary productivity experiments were conducted with the carbon-fourteen method for each sampling. The maximum temperature, 22.16ºC, occurred in summer and the minimum, 16.33ºC, in winter. Both the amplitude of variation and the chlorophyll a concentration were higher in summer. The average of the concentration of nitrates and phosphates of each sampling was very similar throughout the year, except in January due to a storm that caused mixing and homogenization in the water column of the bay, causing the concentration to increase during the flow of the tidal current in the Estero. Primary productivity was higher during the summer months, reaching values of up to 68.32 mgC/ms/h, and lower in autumn and winter with values of 3.57 mgC/m3/h. High assimilation ratio values are reported during neap tides.
