- Sistemas automatizados de análisis para la determinación de fructosa y sacarosa en productos de la industria azucarera M. E. Díaz García A. Valdés M. Granda A. I. Pérez G. Pina Química sugars sucrose fructose reverse FIA spectrophotometry Three classical spectrophotometric systems were assayed for the determination of sucrose and fructose using reverse flowinjection analysis (FIA) approaches as an alternative to the traditional batch analysis. FIA parameters and reaction conditions wereoptimized and the sucrose inversion process, using the common approach of heating in a concentrated HCl medium, as well as that incontinuous flow using milder conditions, was studied. The analytical performance characteristics of the studied systems were compared. The detection limit for sucrose resulted to be 3 and 10 mg/L sucrose using the resorcine and the periodate method, respectively. Underoptimized operating conditions, amounts of sucrose and fructose in the range from the detection limit up to 80 mg/L could bedetermined. The methods employing resorcine and potassium periodate as oxidants for the reducing sugars were selected for realsample analysis. Accuracy and reproducibility were found to be highly satisfactory when different industrial samples were analyzed.© 2002 Altaga.
